The dolia defossa in the cella vinaria, —the winery—, were buried up to their necks in the ground, just as Roman agrarians recommended, thereby keeping the temperature of the wine constant and cool, a necessary measure in hot climate zones (Pliny the Elder, Natural History 14.27). At Vagnari, the circular depressions dug to accommodate the dolia were lined with smoothed mortar which might have helped to protect them from any extremes in temperature. This system of lining an excavated circular depression with mortar in order to place a dolium in it has an older pedigree at Vagnari.
