The aim of this work is the evaluation of the critical points arising when applying traceability to vegetable & fruit chains. The evaluation of the macroeconomics coupled to both the chain model and the identification of the major actors allow to evaluate the main critical points and to propose tools and methods capable of increasing the efficiency of the management. The work is particularly focused on building a chain structure and collecting the data suitable for a good information management, and on proposing measurement methods capable of identifying and following materials during the specific transformation path and this leads to the definition of tools which are helpful to design, model and to manage traceability. Finally the advantages deriving from the proposed approach is fully discussed to evidence possible benefits.
