Tandem mass spectrometry (MS/MS) has proved to be a useful and a time saving analytical tool in many applications of direct detection of target molecules in food samples. When coupled with chromatographic techniques, it combines the separation capabilities of chromatography and the power of MS/MS as an identification and confirmation method. In this paper is presented a summary of our recent researches for the analysis of olives and olive oils for the determination of contaminants (heavy metals), pesticide residues (rotenone, dimethoate and spinosad), for the assay of oleuropein in olis obtained from destoned olives and for tracing the origin of monovarietal olive oils.
